- 10 cups water
- 2 cups frozen peas (or fresh)
- 2 cups cooked quinoa (or quinua, with onion, garlic and broth, or ½ cup uncooked and washed quinoa)
- 4 yukon gold potatoes (medium sized, peeled and cubed, about 1 ½ - 2 lbs)
- 4 Tbsp. chopped parsley (finely)
- 2 Tbsp. chopped cilantro (finely)
- 3 scallions (chopped - optional)
