- 1 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 2 cloves garlic (pressed or very finely chopped)
- 1/2 tsp. salt (each, and pepper)
- 1/2 cup olive oil
- 1/2 cup quinoa
- 2 cups yams (peeled and cubed, for me this was 3 small yams, 2 larger ones would do)
- 2 Tbsp. olive oil
- 1/2 tsp. sea salt (each, and pepper)
- 2 cans chickpeas (14oz, drained and rinsed)
- 1 carrot (peeled and grated)
- 1 1/2 cups spinach leaves (cleaned well and coarsely chopped)
- 1/2 cup parsley (chopped)
- 1/2 cup feta cheese (crumbled)
- 1/2 cup sunflower seeds (toasted)
