Great! I added the spinach to the quinoa as it was cooking rather than in a separate pan at the beginning and substituted mascarpone for the goat cheese. It was creamy and delicious! I would def make this again.

Would rate five stars but as written, the recipe calls for way way way too much liquid for quinoa. Typically, 1 part quinoa to 2 parts liquid works well, but with 5 cups liquid (wine and broth), I was cooking the liquid down for way longer than the recipe called for. Maybe 45 mins instead of 12 mins. Also ended up adding double the quinoa and it turned out really yummy.
