    So super yummy! I didn’t have time to soak the quinoa for very long, so I just rinsed it off and it still turned out very yummy! (I will leave myself time to soak next time though). I loaded up the marinara sauce with some diced onion, garlic, and broccoli, and I also shredded up some vegan cheese to cook into the sauce. This all added some beautiful yet subtle flavor to the vegan mozzarella and fresh basil toppings. I also drizzled some olive oil on top before baking for the final time. Wonderful!
