I love this salad! It makes a great dessert when you want something sweet and are trying not to eat all the sweets in the house.

I took this to a family lunch-get-together for Easter/Passover and made it specifically because my son’s new girlfriend is a vegan. I had made it previously for myself with honey (as suggested) but for this event, I used agave. The dish was such a big hit that when I offered the girlfriend some leftovers, she jumped at the chance (so I gave her the remainder of the batch). I recently contacted my son about getting together to celebrate his upcoming birthday and asked about a small graduation gift for the new girlfriend, who was finishing grad school. He immediately suggested (for her gift) . another batch of this salad! FYI-- The recipe calls for red quinoa, but for the Easter/Passover event, I used white quinoa and loved it-- The juice from the (frozen) fruit mixed together and the colors ranged from blue, to pink, to red, to purple; it was gorgeous, especially for the time-of-year. 6-10-18 ADDENDUM: Made it this week for breakfast and added 3T of chia seeds and 3T of hemp seeds as the quinoa was finishing-up and the dish was great.
