So good!! I doubled it and it made a lot! I didn't have a can of green chilis so I chopped up some jalapenos and a poblano. I also didn't have enough black beans so I used one can of black beans and one of diced tomatoes. Loved it and my husband is a fan! Will definitely make again.

One of our favorite dishes. We usually sub out the homemade enchilada sauce for canned mostly because it's easier, and when we've got the time we'll add in some shredded chicken. Great as-is and tested it with kids when I made it for my sister, brother, and their families: my nieces and nephews strongly approve.

Great, made according to instructions, no tweaks required. Would recommend. Partner not so fussed on quinoa though - this one didn't win him over.
