Traditional enchiladas break out of their tortilla shells and into a quinoa casserole.

Ingredients

  • 1/2 cup uncooked quinoa (or 1 1/2 cups packaged cooked quinoa per 1/2 cup uncooked)
  • 1 can enchilada sauce (10 oz. per can)
  • 1 can diced tomatoes with green chiles (10 oz. per can)
  • 1 cup corn
  • 1 1/4 cups black beans (drained and rinsed)
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/3 cup shredded Monterey Jack cheese (for casserole)
  • 1/3 cup shredded mozzarella cheese (for casserole)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup shredded Monterey Jack cheese (for topping)

    Turned out really well! instead of enchilada sauce i used more diced canned tomatoes and a fajita spice mix I had already made. Water to cook quinoa was listed as 2 cups, which is way too much to cook 1/2 cup quinoa. I used 3/4 cup dried quinoa in 1.5 cups cooking water. my family really enjoyed this with the sour cream, avocado and lime juice. I will make it again for sure.

    Little watery. I ate it with tortilla chips, and it was pretty good. Added oregano as well. It’s lacking in flavor a bit, would maybe be good with some veggie crumbles or something to add to the texture and take away from the watery-ness of of all.
