- 300 grams rice noodles (dried, wide)
- 2 bunches spinach (roughly torn into smaller pieces, stems and leaves)
- 2 eggs (lightly beaten, season with salt and pepper)
- 300 grams king oyster mushroom (hand-torn into bite-size pieces, or just simply sliced)
- 1 handful peanut (toasted, for garnish, optional)
- vegetable oil
- 100 mL oyster sauce (I use gluten-free one)
- 45 mL tamari (or regular soy sauce if not gluten free)
- 1 Tbsp. dark soy sauce (omit if gluten free)
- 2 tsp. brown rice vinegar
- 2 tsp. agave syrup (or brown sugar)
- 1 Tbsp. toasted sesame oil (plus more for frying)
