- 1 yellow onion (diced, 1/2 cup once diced)
- 3 garlic cloves (minced)
- 1/2 tsp. red pepper flakes
- 1 bay leaf
- 5 sprigs fresh thyme
- 2 1/2 cups butternut squash (cubed)
- 1 1/2 cups sweet potatoes
- 1 large potato
- 1 cup potatoes (cubed white, about 1 potato, I prefer red potatoes.)
- 1 cup chopped carrots
- 2 large carrots
- 1 tsp. salt
- 1/4 tsp. black pepper
- 5 cups vegetable broth (or chicken broth)
- 15 oz. Great Northern beans (drained and rinsed--Cannellini beans and Navy beans also work.)
- 2 cups chopped kale
- baby spinach
- 1 lemon juiced
