- 1 medium onion (thinly sliced into 1" pieces)
- 2 jalapeno peppers (fresh, diced with seeds removed, omit for AIP, sub garlic if desired, see below)
- 2 tsp. salt (unrefined)
- 2 tsp. Mexican oregano (dried, regular is OK if you don't have it)
- 1/2 cup filtered water
- 1/2 cup apple cider vinegar
- garlic (optional:, few cloves, to taste - as substitute for jalapeno peppers)
