Description
Here’s my take on this classic Provencal dish. Finely dice aubergines, courgettes, red and green peppers. Fry the aubergines and courgettes until lightly browned, seasoning with Knorr Aromat; remove and strain off excess olive oil. Fry the peppers next, seasoning with Knorr Aromat; remove and strain. Add home-made tomato sauce to the pan, heat through, mix in the fried vegetables, coating them in the sauce.

- 100 mL olive oil
- 2 aubergines (finely diced)
- 2 courgettes (finely diced)
- 2 green peppers (finely diced)
- 2 red peppers (finely diced)
- 1 handful basil (sprigs)
- 1 sprig thyme
- 500 grams tomato sauce (home-made)
- seasoning (Knorr Aromat, to taste)

Directions
- Pour the olive oil into a large, deep frying pan and heat until really hot.
- Add in the aubergine and courgette, tossing the pan to coat the vegetables in the hot oil, and sprinkle with Knorr Aromat to season. Fry, stirring for around 4–5 minutes until lightly browned.
- Remove the fried aubergine and courgette with a slotted spoon and drain in a sieve to prevent them from becoming soggy, pouring back any excess olive oil into the frying pan and heating it through.
