Description
Savory, salty, soul-warming miso soup takes just minutes to prepare if you have instant dashi powder, available at Asian markets and online. Silken tofu, another secret ingredient, has a wonderful custardy texture, but you can substitute soft or medium tofu if you don’t have it. The recipe is a Yummly original created by Diana Kuan.

- 6 cups water
- 2 scallions
- 16 oz. silken tofu (or use soft or medium-firm tofu)
- 2 Tbsp. instant dashi powder
- 6 Tbsp. white miso paste

Directions
- In a medium saucepan, bring water to a boil, then reduce heat to a simmer. Meanwhile, slice scallions into rounds about 1/4 inch thick. Drain tofu and cut it into 1/2-inch squares. Set scallions and tofu aside.
- Stir dashi powder into simmering water. Add miso paste and stir until all of it is dissolved, about 2 minutes.
- Carefully add tofu to the soup and simmer for 1 minute.
- Ladle soup into bowls and sprinkle with scallions.
