- 8 manicotti shells
- 20 oz. frozen spinach (if I have fresh spinach on hand, I’ll replace it with the frozen stuff by sautéing it in the garlic and some olive oil. My fresh to frozen ratio is about 1 1/2 cup of loosely packed fresh spinach for every cup of frozen spinach)
- 1 1/3 cups ricotta
- 1 clove garlic (minced)
- 1 pinch nutmeg
- 1 tsp. salt
- ground black pepper (freshly)
- 1 cup marinara sauce
- 1/3 cup parmesan reggiano (grated)
- 1 cup shredded mozzarella
