    Doubled the recipe for a larger family. I think you could easily just get the thinner chicken breast at the store and save some time, but maybe flattening it urself also tenderizes it? I’m not sure. It was definitely easy to make, and tasted like the chicken piccata I ordered at a restaurant once. I juiced the lemon a head of time, and you could probably also do the chicken to save time. The only thing I did different, was not putting the chicken back in the sauce, and only bc I had to many to fit. Was easier to give to the kids that way too. Made pasta to sit under it, and an easy cucumber, tomato, onion side. Great meal!
