- 1 oz. powdered gelatin (powdered)
- 1 Tbsp. vegetable oil
- 1 ginger (4-inch hand, split in half lengthwise)
- 2 onions (medium, split in half)
- 2 Tbsp. sugar
- 1/4 cup fish sauce (plus more to taste)
- 3/4 lb. flank steak (divided into two pieces)
- 4 noodles (servings pho, prepared according to package directions)
- 2 cups herbs (mixed, cilantro, basil, and mint)
- 2 cups bean sprouts (trimmed)
- 1/2 cup scallions (sliced)
