- 1 cup chicken stock (or broth)
- 2 cups cooked vegetables (leftover)
- 1 lemon (juiced)
- 1 garlic clove (minced)
- 1 tsp. italian seasoning
- 1 Tbsp. white wine (butter, OR cream)
- 1 Tbsp. grated Parmesan cheese (more for serving if desired)
- 5 cups pasta (cooked, 8-12 oz dry)
- 1/2 cup pasta water

Directions
- In a skillet over medium high heat, add 1 cup of stock or broth. Simmer 5 minutes.
- Add the lemon juice, 1 tsp Italian seasoning, minced garlic, pasta water, and wine, butter, or cream. (Wine will keep dish extra light!)
- Simmer 5 more minutes, stirring occasionally.
