Was only okay, but probably in part because I used Thai Kitchen curry paste, which I was later informed is a subpar brand. Unfortunately, it's also the only brand many people have access to. In the future, would add additional cayenne, cumin, garam masala, and something acidic to give it the depth I really want from a curry.

Quick and easy to make. I made it with quinoa and also added tofu for extra protein. Delicious!

I made it with half the red Thai curry and kale instead of spinach. Delicious.

added chilli flakes and apple cider vinegar for extra kicks and turned out delicious!

Very good! Didnt have curry paste so i used curry powder and it turned out delicious!

This is a great, quick vegetarian meal. I also added a 1/2 teaspoon of garam masala. This is a new favorite! Yummly!!!

Excellent . I used a little bit less curry paste, but it was still awesome. The amount of rice was a bit excessive, so I halved it and still had enough to feed three people. And FYI--my dear old sainted mother apparently ate lentils with cottage cheese back in her childhood and I thought 'ew' but I tried it, and it's really good!

Super easy and was fantastic. Even my meat eaters loved it! Easy enough for my teenagers to make and have ready for me after work😄
