Could not have been easier. My wife loved them. For some unknown reason, we did not have any mozzarella cheese in the house, so I used a nice creamy Havarti cheese and it still turned out perfect. I tore up prosciutto vs the pepperoni which pretty much tells you that between the large Portabella mushroom and the tomato sauce anything goes! As soon as the cheese melts, at around 10 minute mark, take it out of the oven or it will break over the edge of the caps. Parsley added a nice finish. Already planning next meal with these in mind-
