- 3/4 lb. skinless boneless chicken breast (cut into thin slices)
- 2 whole star anise
- 2 whole cloves
- 1 1/4 inches ginger (cut into slices, each slice smashed)
- 2 scallions (white parts and green parts separated)
- 1/2 cup water
- 3 cups chicken broth (+ 1/2 cup water)
- 3 tsp. fish sauce (or to taste)
- 1/4 cup thai basil leaves (fresh, destemmed)
- 1/2 cup fresh mint leaves (destemmed)
- 1/2 cup cilantro leaves (fresh, destemmed)
- 2 green chilies (deseeded and chopped)
- 2 lime slices
- 1 shallot (very thinly sliced)
- 5 Tbsp. vegetable oil (you can save and reuse most of this flavored oil later)
- rice vermicelli (2 servings cooked according to package directions, I use brown rice vermicelli)
