Elevate your weeknight dinner game with these one-pan, one-bowl pork chops, where big, bold flavors meet speedy preparation. The pork chops are a take on pork bulgogi, which also has a sweet and spicy flavor thanks to gochujang, the Korean hot chili paste that’s available in so many grocery stores now. Here, the pork chops get a 10-minute marinade with pineapple to help tenderize the meat before hitting the stove for just 10 minutes of cooking. Be sure to reserve the marinade to cook down for a delicious, succulent sauce to serve over your pork chops. All you need is some steamed broccoli and rice on the side. Ingredients
- 1 piece fresh ginger (small, enough to make 1 tsp. grated)
- 4 cloves garlic
- 1 cup canned crushed pineapple (unsweetened, undrained and with some juice)
- 3 Tbsp. soy sauce
- 3 Tbsp. gochujang
- 2 tsp. toasted sesame oil
- 2 tsp. honey
- 1/4 tsp. black pepper
- 4 boneless pork loin chops (about 3/4 inch thick, 1 1/2 lb. total)
- 2 scallions
- 2 Tbsp. vegetable oil (or other high-heat cooking oil)
Directions
- Peel ginger and grate it until you have about 1 tsp. Finely chop garlic.
- In a bowl, stir together ginger, garlic, pineapple, soy sauce, gochujang, sesame oil, honey, and pepper. Put pork chops in a gallon zip-top plastic bag and pour the marinade over them. Marinate at room temperature for 10 minutes, turning occasionally. Meanwhile, thinly slice scallions, then set aside.
- Heat a large frying pan over medium-high heat until a bead of water evaporates on contact. Add vegetable oil. Remove pork chops from marinade, reserving it. Sear pork chops until the underside is golden brown, 2-3 minutes. Turn pork chops over and sear for another 2 minutes.
- Add marinade to pork chops and reduce heat to medium. Cook until the meat reaches 145°F in the thickest part when tested with an instant-read thermometer, 6-7 minutes, and the sauce has reduced somewhat. (If pork chops are different sizes or thicknesses, you may have to check each one individually to ensure doneness.) Transfer pork chops to a platter, cover with foil, and let rest for 3 minutes. While they’re resting, give the sauce a good stir to thoroughly combine the ingredients.
- Set pork chops on plates and spoon sauce on top. Sprinkle with scallions.
