  • 1 can white beans (Great Northern or other)
  • 3 cups cubed potatoes (peeled)
  • 1 fennel bulb (sliced I'll leave this out since I have no fennel now)
  • 2 stalks celery (diced)
  • 3 carrots (peeled and sliced thinly on the diagonal)
  • 1 cup leeks (chopped, or scallions)
  • 1 cup chicken breast (leftover, or other meat)
  • 3 tablespoons olive oil (or other vegetable oil)
  • 1 clove garlic (minced)
  • 1 teaspoon dried basil (OR 1 Tblsp fresh minced)
  • 1 teaspoon marjoram (dried, OR 1 Tblsp fresh minced)
  • 1/2 teaspoon dried thyme (OR several fresh sprigs)
  • 1/2 teaspoon ground fennel (dried, or celery seed)
  • 1 pinch cayenne
  • 6 cups boiling water
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
