- 1/2 cup hoisin sauce
- 1/2 cup pineapple juice
- 1/4 cup rice wine vinegar
- 2 Tbsp. creamy peanut butter (melted, optional)
- 2 Tbsp. hot chili sesame oil
- 4 Tbsp. honey (depending on your taste)
- 2 Tbsp. toasted sesame seeds
- 2 Tbsp. ginger (grated)
- 2 cloves garlic (minced or grated, depending on your taste)
- 3/4 cup raw cashews
- 2 Tbsp. sesame oil
- 1 lb. boneless skinless chicken (cut into 1 inch cubes)
- 4 baby bok choy (halved)
- 1 cup frozen broccoli (or fresh)
- 2 red peppers (sliced)
- 2 carrots (shredded)
- 2 zucchini (chopped)
- 1 cup fresh pineapple (diced)
- 30 beef (minute-korean-, toasted-sesame-rice/], for serving)
- 4 green onions (chopped)

It was really good! Lasted for a week. Will be making it again, but I’m going to omit the pineapples this time.

This was delicious but holy moly was it salty! I don't shy away from using salt but even I found it too much, and my husband, much as he loved the taste, had to give up after eating about half his dinner. I think though that replacing normal soy with low sodium may help, and I will definitely try that as it really was so tasty I want to make it again.
