- 1 lb. fresh chorizo (Mexican style, such as Hatfield Recipe Essentials Chorizo Ground Sausage)
- salt (to taste)
- 1 onion (large, chopped)
- 30 oz. shredded cheese (see recipe notes, ideally a combination of Chihuahua cheese and Oaxacan string cheese)
- 3/4 cup heavy cream
- 1 Tbsp. hot sauce (Mexican style, optional, we love Tapatio, see notes)
- 1/2 tsp. Mexican oregano
