Why make an ordinary potato salad when you can make purple potato salad. Higher in vitamins and minerals, the purple potato known as the "Purple Majesty Potato" is a beautiful option for making root-based salads. Garnished with kale flowers and fennel leaves and tossed in a tangy coriander dressing, this salad will surely wow at your next picnic.

- 4 potatoes (purple majesty)
- 1 Tbsp. fennel leaves (minced)
- kale (optional)
- 1 Tbsp. coriander (crushed)
- 1 Tbsp. cilantro (diced)
- 1/2 lemon
- 2 Tbsp. olive oil
- salt (to taste)

Directions
- Boil the potatoes until tender. Don’t over-boil them or they'll be mushy and won't hold up well in the salad. Just check them frequently.
- Meanwhile prepare the dressing: Finely process the coriander with a mortar and pestle. In a small bowl, add processed coriander, olive oil, lemon, cilantro and salt to taste. Mix well.
- Cut the potatoes to desired size and place in a large bowl. Mix in the fennel leaves. Pour in the dressing and toss to ensure everything is evenly coated in the dressing. Finally, add the kale flowers for garnish.
