- 1 inch ginger (minced)
- 1/2 tsp. turmeric
- 3/4 tsp. salt (or to taste)
- 1 tsp. oil
- 1/2 tsp. cumin seeds
- 1/2 tsp. mustard seeds (optional)
- 2 bay leaves
- 2 cloves
- 1 pinch asafetida (hing optional)
- 1/2 red onion (finely chopped, 3/4 cup)
- 4 cloves garlic (finely chopped)
- 2 green chilies (chopped or sliced)
- 1 tsp. Garam Masala
- 1/2 tsp. red chili powder (cayenne)
- 1/2 tsp. amchur (dry mango powder, or add lime juice to taste)
- 1 Tbsp. vegan butter
- 1/2 cup chopped cilantro (for garnish, optional)
