- 250 grams spelt flour (white)
- 125 grams butter (chilled and cut into cubes)

- 1 Tbsp. chilled water
- 600 grams pumpkin (butternut, washed, skin left on and sliced into inch thick slices)
- 1 leek (sliced)
- 1/2 Tbsp. butter (ghee or coconut oil)

- 1/2 cup coconut milk (full fat, or milk of your choice)
- 1/4 tsp. nutmeg (or more to taste)
- 1/4 tsp. sea salt
- 150 grams halloumi (sliced)
- 7 sage leaves (fresh)
- black pepper (to taste)
