- 1 1/2 cups granulated sugar
- 1 1/2 cups water
- 1 cup pumpkin puree
- 1/3 cup maple syrup (or 1 teaspoon maple syrup flavoring- You can leave this out, but it's good!)
- 3 sticks canela (next time I'm using 5+)
- 10 whole cloves
- 9 cardamom pods (crush, green)
- 3 tsp. whole peppercorns (crushed with the flat part of a knife)
- 4 slices crystallized ginger (or crushed fresh ginger)
- 2 pieces mace (dried, or ground nutmeg if desired)
- 3/4 cup sugar
- 3/4 cup water
- 10 cardamom pods (crushed)
- 1 Tbsp. whole peppercorns (crushed)
- 6 sticks canela
- 3 slices ginger (or crystallized ginger)
- 5 cloves
- 10 berries (all spice, crushed)
