- 1 cup canola oil
- 3 eggs (at room temperature)
- 1/4 cup sour cream
- 2 tsp. vanilla extract
- 2 1/4 cups all purpose flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 2 cups canned pumpkin (pure)
- 1 cup unsalted butter (at room temperature)
- 1 cup full fat cream cheese (cut into cubes and softened for about 20 seconds in the microwave)
- 9 cups icing (/powdered sugar, less, if you prefer a softer, less-sweet frosting)
- 2 tsp. vanilla extract
- 1 1/2 tsp. ground cinnamon
- 2 1/2 cups unsalted butter (at room temperature)
- 6 cups icing sugar
- 1 1/2 tsp. vanilla extract
- 1 tsp. vanilla bean paste
- 1/2 cup rainbow sprinkles (depending on how sprinkly you want your frosting to be)
- pink food colouring (I use AmeriColor gel-paste colour in Soft Pink)
