- 2 Tbsp. cooking oil
- 3 Tbsp. Thai red curry paste (you may add more or less, but 3 Tbsp is ideal to me)
- 3 Tbsp. miso (it's ok to use white, red or mixed miso. I used mixed)
- 15 oz. canned pumpkin puree
- 4 cups chicken broth
- 1 cup coconut milk
- 2 cups pumpkins (2x2 inch cubed)
- 1 lb. large shrimp (shelled and deveined)
- 4 Tbsp. brown sugar
- salt (to taste)
- 16 oz. ramen noodles (or spaghetti noodles)
