- 1 cup oat flour (see notes below on how to make oat flour from rolled oats)
- 1 1/2 cups rolled oats (whole)
- 1 baking soda (teasp)
- 1/2 salt (teasp)
- 1/4 cup flaxseeds (gound)
- 3 pumpkin pie spice (teasp)
- 1/2 cup applesauce
- 2/3 cup pumpkin puree (pure, I used puree from can)
- 1/2 cup pure maple syrup
- 6 Tbsp. coconut oil
- 1 vanilla extract (teasp)

Excellent! Although I forgot to grab flaxseed so I replaced with Bob red mill’s egg replacer. They came out very soft so next time around I’ll make with the flaxseed and hopefully they’ll come up more cookie like!
