Pumpkin Pancakes with cinnamon and peanut butter chips.

I love these pancake because they remind me of pumpkin pie. They really lend themselves will toward a healthy version well too. Just use whole grain pancake mix and whole grain cream of wheat or whole grain farina. Combined with the other ingredients the whole grain version is just plain yummy. You will think you are cheating on your diet. For those that prefer different types of chips like chocolate or caramel that is yet another way to enjoy these pancake. You can even use sweet potato puree instead. Either way its is a yummy treat for the fall and winter season. I even use the batter to make muffins.
Ingredients
- 3 cups pancake mix
- 1/3 cup peanut butter chips
- 1/3 cup chips (cinnamon)
- 1 1/2 tsp. pumpkin spice
- 1 3/4 cups pumpkin puree
- 3 cups milk
- 3 large eggs
- 1 cup cream of wheat
Directions
- Combine all ingredients together in a bowl.
- Heat nonstick pan to Medium Heat. Pour 1/4 to 2/3 cup batter into pan depending on the size pancake you would like.
- Allow to cook on one side until sides appear dry and bubbles appear all over surface of pancake before flipping to the other side.
- Pancake might appear slightly undercooked due to the pumpkin puree and peanut chips if eaten straight from the stovetop but if you let it cool it will set.
- Try without syrup first because the pancake if already sweet from the cinnamon chips.
