- 1 cup coconut milk (non dairy milk I used So Delicious)
- 1/2 cup pumpkin puree
- 1 Tbsp. meal (chia, If using flax meal, use 4 teaspoons meal and set aside to gel, OR 1 egg)
- 1 tsp. vanilla extract
- 3 Tbsp. avocado oil
- 2 Tbsp. maple syrup (honey, or replace up to half with equivalent in stevia liquid)
- 1/2 cup teff flour (you can use brown rice if you don't have it)
- 1/2 cup sorghum flour (or millet flour)
- 1/2 cup tapioca flour
- 2 tsp. baking powder
- 2 tsp. canela (could use pumpkin pie spice)
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
