Description

This is the home favorite. On the weekends, it is the most requested breakfast I am asked to make, and taste magnificent. The taste of pumpkin is not overpowering, rather it gives a soft texture to the cake, and makes the batter thicker, thereby allowing you to make more.

  • 3 cups flour
  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons baking soda
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 6 nutmeg (shakes of)
  • 3 allspice (shakes of)
  • 4 cinnamon (shakes of)
  • 3 clove (shakes of)
  • 1 can canned pumpkin (pureed)
  • 3 cups buttermilk (optional)
  • 1/2 cup milk
  • 3 cups butter (melted)
  • 3 eggs (4 depending on size of egg)
  • 1 dash vanilla (optional)

    Directions

    1. Mix the dry ingredients first, blend together well. (flour, sugar, spices, salt, powder, soda)
    2. Mix the wet ingredients. (pumpkin, buttermilk, milk, eggs, vanilla (optional), butter, etc.)
    3. Mix the wet ingredients with the dry. Batter should be normal and thick, but not too runny. Add a little flour if the batter is too runny.
