The addition of kosher salt to the streusel creates such a delicious balance of salty and sweet as you bite into these muffins!
As the recipe states, one should just be careful not to overbake. I traditionally subtract some from the cooking time in the recipe. However, I continued to have batter on the toothpick each time I checked, so it took the full suggested time to get the centers set. Unfortunately that ultimately resulted in them not being as moist as I prefer. I may try increasing the pumpkin or egg just a bit next time to thin the batter. But I'll definitely be making these again!
