Sweet, delicious pumpkin fritters. South African classic. Recipe from Gramadoelas restaurant.
Ingredients

- 4 cups pumpkin (cooked mashed)
- 2 cups pumpkin (grated raw, blanched and trained)
- 1 tsp. baking powder
- 1/2 cup flour
- 1/2 tsp. salt
- 1 egg
- oil
- sugar

Directions
- Mash the cooked pumpkin and grated blanched pumpkin together in a mixing bowl.
- Sift in the flour, salt and baking powder. Mix until the, mixture is smooth and soft.
- Beat an egg well and combine it with the mixture until it is well-blended.
