- 1 cup solid-pack pumpkin (not pumpkin pie filling)
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger

- 1 dash ground cloves
- 1 dash allspice

- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1 1/2 tsp. ground ginger
- 1/2 tsp. ground black pepper
- 11 Tbsp. butter (150 g, unsalted, at room temperature)
- 2/3 cup sugar (130 g)
- 1/2 tsp. vanilla extract
- 1/4 cup molasses (80 g, mild-flavored, sometimes called ‘light’ molasses)
- 1 large egg (at room temperature)
- coarse sugar (crystals, for coating the cookies, optional)
