- 2 cups gluten free baking mix (The Pure Pantry Organic All Purpose, ., I didn't have quite 2 cups so I added The Pure Pantry Organic Buckwheat Flax Pancake and Baking Mix to make up the full 2 cups of flour)
- 1/2 tsp. baking powder
- 2 tsp. pumpkin pie spice
- 3 eggs (organic eggs OR egg replacer)
- 1 1/3 cups canned pumpkin
- 1 cup brown sugar (organic)
- 2 Tbsp. maple syrup
- 1/2 cup safflower oil
- 1/4 cup soy milk (vanilla flavored)
- 3/4 cup almond flour
- 1/2 cup chips (mini choc, I use Enjoy Life)
