- 1/2 cup water (or low-sodium veggie broth, I used broth, + 1 additional cup later)
- 1 1/2 cups white onion (finely chopped)
- 6 cloves garlic (16 g, minced, you'll need 1 1/2 tablespoons)
- 45 oz. chili beans (rinsed well, or 1 black bean, 1 pinto bean and 1 kidney bean)
- 1 1/2 cups tomato sauce (/puree)
- 3/4 cup pumpkin puree (Sprouts)
- 3 tsp. chipotle peppers in adobo sauce (minced, I used 3)
- 1 Tbsp. chili powder (Sprouts, any brand is fine)
- 1 tsp. ground cumin
- 2 tsp. fine sea salt
- 1/2 tsp. coriander (optional)
- 2/3 cup raw cashews
- 2/3 cup water
- 3 Tbsp. fresh lemon juice
- 1/2 tsp. apple cider vinegar
- 1/4 tsp. fine sea salt
- fresh cilantro
- lime wedges
