- 2 1/2 cups spelt flour (whole, or all-purpose flour, plus more for dusting pan)
- 9 Tbsp. granulated sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 tsp. pumpkin pie spice (add more for more pronounced pumpkin flavor)
- 3/4 cup cheese (I used a combination of sharp cheddar and smoked gouda; I use a Microplane grater and this is for a loosely-packed measurement; add more cheese for a more pronounced cheese flavor)
- 15 oz. pumpkin purée (not pumpkin filling)
- 1/4 cup plain yogurt
- 2 eggs (beaten slightly or the equivalent in an egg substitute; I used Bob's Red Mill Egg Replacer)
- 4 Tbsp. olive oil (or coconut oil or butter, melted and cooled)
