  • 9 tablespoons granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon pumpkin pie spice (add more for more pronounced pumpkin flavor)
  • 3/4 cup cheese (I used a combination of sharp cheddar and smoked gouda; I use a Microplane grater and this is for a loosely-packed measurement; add more cheese for a more pronounced cheese flavor)
  • 15 ounces pumpkin purée (not pumpkin filling)
  • 1/4 cup plain yogurt
  • 2 eggs (beaten slightly or the equivalent in an egg substitute; I used Bob's Red Mill Egg Replacer)
  • 4 tablespoons olive oil (or coconut oil or butter, melted and cooled)
