- 1 cup non-dairy milk (I used unsweetened almond, room temperature)
- 3 Tbsp. oil (choice I used coconut oil)
- 1 tsp. vanilla extract
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cardamom
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 1/4 tsp. ground nutmeg
- 1/8 tsp. black pepper
- 1 pkg. muffin mix (Simple Mills Pumpkin, & Loaf Mix)
- 1 1/2 cups raw cashews (soaked in water in the refrigerator overnight, at least 6 hours, up to 12)
- 1/4 cup coconut cream
- 1/4 cup coconut oil (melted, use refined for no coconut flavor)
- 1/4 cup maple syrup
- 1 Tbsp. fresh lemon juice
- 1/2 tsp. vanilla extract
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cardamom
- 1/8 tsp. ground cloves
- 1/8 tsp. ground allspice
- 1/8 tsp. ground nutmeg
- 1/8 tsp. black pepper
- 1/8 tsp. kosher salt
