- 15 oz. pumpkin puree
- 1 onion (large, peeled and finely chopped)
- 3 Tbsp. butter (or earth balance)
- 28 oz. tomatoes (whole)
- 1/4 cup basil (fresh chopped, or more)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 large carrots (peeled and chopped)
- 5 cups low sodium chicken broth (or vegetable)
- 1/2 tsp. salt
- pepitas

Directions
- in large soup pot, cook onion in butter about 4 to 5 minutes. add juice from canned tomatoes, then chop tomatoes and add with basil, salt, and pepper. simmer gently about 10 more minutes
- in second small saucepan, simmer carrots in 2 1/2 cups of chicken broth until soft
- using an immersion blender, blend carrots and broth until pureed. alternatively, pour soft carrots and broth into a blender or food processor and blend. use extreme caution when blending hot soups
