- 1 Tbsp. black peppercorns
- 6 cloves
- 5 red chillies (large, dried, torn into pieces)
- 10 cms fresh root ginger (/4in piece)
- 8 garlic cloves
- 4 small red onion (coarsely cut)
- 2 green chillies (longish)
- 1 tsp. ground turmeric
- 100 mL tamarind pulp (/3½fl oz)
- 200 mL palm vinegar (alternatively use cider vinegar)
- 100 mL rapeseed oil (or /3½fl oz sunflower)
- 1 Tbsp. brown sugar
- 1 Tbsp. salt
- 2 kilograms pork loin (rolled, shoulder or collar)
- 400 grams pumpkin (seeds removed, cut into chunks)
- 8 small potatoes (medium to, peeled and cut into chunks)
- 4 red onions (small, cut into chunks, optional)
- 3 Tbsp. fresh coriander (chopped)
- 1 carrot (coarsley grated)
- 1/4 cabbage (shredded)
- 1/4 white radish (coarsley grated)
- 1/3 breakfast radishes (a bunch of, coarsley grated)
- 1/4 celeriac (coarsley grated)
- 1 red onion (thinly sliced)
- 2 beetroots (small, peeled and coarsley grated)
- 2 garlic cloves (finely chopped)
- 150 grams mayonnaise (/5½oz)
- 1 Tbsp. wholegrain mustard
- 1 green chilli (finely chopped)
- 4 Tbsp. fresh coriander (finely chopped)
