Description
The ultimate comfort food, these pulled pork sandwiches are packed with sweet and spicy flavor. Paired with a coleslaw inspired cabbage salad made with apple cider vinegar, comfort food has never tasted so good or been so good for you. Allow ample time for cooking, as the pork is slow roasted in the oven for maximum tenderness.

- 2 kilograms pork shoulder (with bone)
- sea salt
- freshly ground black pepper
- 2 Tbsp. olive oil
- 1 onion (finely chopped very)
- 2 garlic cloves (crushed)
- 1 carrot (diced)
- 2 celery stalks (finely diced)
- 1 long red chili (finely diced)
- 1 cup apple cider vinegar
- 2 Tbsp. brown sugar
- 1 Tbsp. tomato paste (puree)
- 4 Tbsp. molasses
- 2 Tbsp. mustard powder
- 1/2 tsp. ground turmeric
- 1/2 cup white vinegar
- 500 mL chicken stock
- 1/2 tsp. dried chili flakes
- 1 Tbsp. chipotle sauce
- 1 1/2 tsp. cornstarch
- 2 Tbsp. cold water
- 1 onion (finely chopped)
- 1/4 white cabbage (stuffed, leaves very finely chopped)
- 1/4 red cabbage (stuffed, leaves very finely chopped)
- 1 carrots (peeled and cut into ribbons with a vegetable peeler)
- 8 radishes (very finely minced)
- 1 onion (chopped and very thinly sliced)
- 2 Tbsp. apple cider vinegar
- 1/3 cup red wine vinegar
- 3 Tbsp. extra-virgin olive oil
- 1 lemon (juice of)
- sea salt
- freshly ground black pepper

Directions
- Preheat the oven to 160 ° C.
- Place the pork shoulder in a dish, skin side down and season with S&P.
- Turn the meat over so that the skin is facing up, then cover with foil and cook for 5-6 hours.
