  • 2 tablespoons coconut oil (or unsalted butter)
  • 1 sweet potato (large, diced, about 1 cup)
  • 1 red bell pepper (seeded and diced)
  • 1 yellow onion (diced)
  • 1 clove garlic (minced)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoons fresh herbs

    Directions

    1. In a large sauté pan melt coconut oil or butter. Once it is hot add in sweet potato and let cook for about 5 minutes. Add in red pepper, onions and garlic. Cook for about 5-7 minutes then season with salt and pepper.
    2. Add in pulled pork, cover and reduce to medium. Cook for 5-7 minutes. Add in fresh herbs before serving.
