- 1/2 lb. scallops (/ grams fresh “dry”, minced coarsely. Either sea or bay.)
- 1 bell pepper (small and optional mini, de-seeded and minced. Go for something colorful, if using.)
- 1 scallion (/ green onion, diced.)
- 2 oz. feta (chopped and crumbled)
- 2 Tbsp. yogurt (plain quality)
- 1/2 Tbsp. capers (rinsed and drained)
- 6 mint leaves (chopped., I’d add a few more…)
- 1 tsp. dried oregano (. Heaping, if desired.)
- ground pepper
