- 1 1/2 lb. chicken drumsticks (with skin)
- adobo seasoning (Goya, for chicken)
- 1 lb. yellow rice (seasoned, uncooked, I use Vigo Low Sodium Saffron Yellow Rice)
- 1 packet seasoning (Goya Sazón)
- 1/2 onion (large, finely chopped)
- 1/2 red pepper (finely chopped)
- 2 cloves garlic (minced)
- 30 oz. pigeon peas (Green, drained and rinsed)
- 15 oz. tomato sauce
- 4 cups low sodium chicken broth (if you want lower the salt content, you can substitute 2 cups of broth for water)
- 1/4 cup canola oil
