- 8 oz. roasted red peppers (finely chopped)

- 2 Tbsp. adobo seasoning
- 1 Tbsp. black pepper
- 1 pinch ground cloves
- 4 cups long grain rice
- 5 cups chicken broth
- 1 roasted red peppers (large bottled, cut into 1/4-inch strips, about 1 1/2 cups)
- 1 cup olive oil
- 2 Tbsp. seeds (achiote, annatto)
- 2 yellow onions (or medium Spanish, cut into large chunks)
- 1 green bell pepper (red and, rough chop)
- 3 jalapenos (diced)
- 8 cloves garlic (diced)
- 1 bunch cilantro (washed)
- 4 plum tomatoes (ripe, about 1 pound, cored and cut into chunks)
