Sooo good. i used regular cheddar cheese instead of Mexican style and it really was a nice balance. I will definitely be making this again.

It's in our regular rotation and there are no leftovers when making as per the recipe. The Mexican Style Quinoa recipe makes about 3.5 cups so will increase the Burrito recipe accordingly to allow for larger appetites or for leftover burritos. Didn't crisp as much as the kids like it so brushed with margarine and broiled a few minutes on each side at the end.

Excellent!! I didn’t modify it at all. I used regular,cheese, rather than low fat. Greek yogurt goes well too! Would definitely make this again!

The quinoa was very nice with my vegitarian burritos, this simple recipe is great by itself or even as a broken burrito bowl! 10/10 will make again

Fantastic and delicious! I made these as suggested, flauta-style, and there were no leftovers. I honestly cannot think of another thing to add to these, except more heat and maybe some avocado to top it off. :) I will most definitely be making these again!
