- 2 Tbsp. refined coconut oil (liquid)
- 12 button mushrooms (with stem, sliced, about 4 cups)
- 1 garlic (big clove of, don’t omit!)
- 1/2 cup butter beans (tinned, drained and rinsed well, other light-coloured beans should work too)
- 3 Tbsp. red wine
- 2 Tbsp. water
- 2 Tbsp. less sodium soy sauce
- 4 Tbsp. nutritional yeast (the ‘meaty’ kind)
- 1/2 Tbsp. tomato paste
- 2 Tbsp. juice (beetroot, optional, for colour)
- 2 Tbsp. raw cane sugar (or other sugar, don’t omit!)
- 1 1/2 tsp. liquid smoke
- 1 1/2 tsp. sesame oil (don’t omit!)
- 1 1/2 tsp. kala namak (don’t omit!)
- 1/4 tsp. ground coriander (don’t omit!)
- 200 grams vital wheat gluten (1 cup, tightly packed)
