Directions
- With a knife, puncture roast and press garlic clove into puncture impressions on all sides.
- Spread butter heavily on all sides of roast, sprinkling with salt and pepper to taste.
- Place celery and onions at bottom of roasting pan, place rosemary and thyme on top.
- Place roast on celery, onions and thyme.
- Roast uncovered in 500 degree oven for 13 minutes, without opening oven, reduce oven temperature to 325 degrees and roast for 15 minutes per pound for medium rare.
